Jallab is a summertime beverage popular in Jordan, Lebanon, and Syria. Sweet and floral, the refresher is often served during Ramadan after sunset, when Muslims break their day-long fast from food and drink. The beverage is made with syrup or molasses made from dates, although some people use sweeteners sourced from grapes or carob.

1- Jallab drink is originally made with Carob and not Grapes or Dates. 2- Jallab is served with pine kernels (raw) and raisins (rehydrated). 3- As an alternative, you could use your Jallab concentrate to make excellent frozen Ice Cream or a variant of Carrot cake. 4- The Carob pods are harvested in summer and sun dried.

Instructions Pour the jalab syrup into a large glass, cover with cold water and mix. Add crushed ice. Garnish the drink with raisins and pine nuts. Serve immediately.

Jallab is made by mixing together grape molasses, rose water, dates and sugar (as needed), after which it's smoked with an Arabic incense and served with nuts and raisins.

To make it easier, it is made now as a combination of grenadine syrup, grape molasses and rose water, and flavored with some incense. I wanted to keep my version of Jallab as close to the original.
